Sukhothai Province is in the north of Thailand and owns Yom River as one of its natural resources. It was the capital of the first Kingdom of Siam between 13th and 14thcenturies. In terms of Art, you will be blessed by the Sukhothai style. It got its famous nickname “The Dawn of Happiness” thanks to its prosperous age in economic and cultural aspect.

But today, we are here to talk about cuisine !



We call it Kuay Tiao Sukhothai in Thai. Try to order in Thai and watch the reaction of the waiter ! The recipe is simple : rice noodles, crushed peanuts, sliced long beans, lime juice. Then, you will have two options between the broth being served on the side or in the bowl. Both options are tasty, so it depends on your own taste.



In English, we can call it Stir-Fried Fish in Red Curry. Red curry in Thailand is composed of dried red chilies, garlic, shallot, lemongrass and other spices, making the dish spicy and aromatic.

The dish itself is composed of Thai Basil, multiple spices and a mix of palm sugar, fish sauce and red curry paste. The final presentation will be a crispy fish coated in this aromatic sauce.



In English, we call it Crispy Deep-Fried Pork Belly. Some of you may know what I am talking about. It is famous all around Thailand, but it is not a Sukhothai recipe. However the recipe is so good, authentic, and cheap here, that you must give it a try.

Know that other versions exist, such as Deep-Fried Pork Belly coated in a sweet sauce. A must-try during your visit here.



This dish is rare nowadays to find it. You can find it in a small community called Baan Na Ton Chan community at Sri Satchnalai district in Sukhothai. Behind Kao Perb (“Perb” means folding), there is a story. Locals couldn’t find the ingredients for the recipe as it was expensive and far away from their home. Instead, they adapted the recipe and created their own flat noodles by using rice.



This dish is a fish soup but with a subtle taste of a bean soup. Don’t try to search elsewhere, Sukhothai is the only place where you can find it. The ingredients are local and fresh which is fish, mushrooms, green beans, and pumpkin.
